Greek Orzo Salad
So excited to share this easy yet super delicious Greek orzo salad recipe. It's filling, fresh and perfect for a little date night meal ❤
Orzo is a rice like pasta, made from durum wheat. It's often used in soups and salads and in some Mediterranean dishes. Orzo is high carb, low fat food. I love it because it keeps me full for hours and it gives me a great energy boost when I'm feeling frail or hungry. Because it is basically pasta, you can prepare it by simply boiling it in hot water. I always recommending following the package instructions as some brands require longer cooking time.
This salad is definitely recommended to anyone who wants a change from typical pasta and red sauce to something more fun, colorful and nutritious.

Greek Orzo Salad

Ingredients
Pasta
- 1 package orzo pasta cooked according to package instructions
- 1 cup sundried tomatoes
- 3 garlic cloves minced
- Grapeseed oil
Toppings
- 3 cucumbers diced
- 2 cups cherry tomatoes diced
- 1 can of black olives
- Small onion diced
- A handful of your choice of greens
- 1 handful crumbled feta cheese
Dressing
- 1/2 tsp mint
- 1/2 tsp basil
- 1/2 tsp thyme
- 1/2 tsp dill
- 1/4 tsp tarragon
- 1/4 tsp Oregano
- 2 lemons juiced
- Olive oil
- Salt and pepper to taste
Instructions
- Follow package instructions to cook the pasta
- Meanwhile in a different pot, saute the garlic and the sundried tomatoes for a few minutes
- Once the orzo cooks, you can transfer it to the pot.
- Toss the mix on low heat for a few minutes
- Wait until the orzo cools then add it in a bowl with the veggies and feta cheese
- For the dressing, add all the ingredients in a shaker cup, mix and shake well
- Add the dressing on top of the orzo and veggies
- Toss it well and serve with a side of French bread or soup
