When I think of Summer.


Like all of the seasons of the year, Summer has a very distinct taste. Notes of watermelon, fresh tomatoes and cucumbers and homemade ice cream. I like to make up some delicious desserts with fresh summer offerings like our HOMEMADE PEACH COBBLER, STRAWBERRY UPSIDE DOWN CAKE and even our BEST EVER GRAPE SALAD!

This Southern Dill Chicken Salad falls in the same category for me. If Summer had a taste, it would be one! Fresh bites of dill pickle relish coupled with the tang of unsweetened greek yogurt seasoned with basic but delicious seasonings are all wonderful additions to the shredded cooked chicken.


Where did it come from?


The whole concept of chicken salad to us is one that is staple in most homes. However, did you know it has a rich history? This delicious dish goes way back in history all the way back to the Chinese and French cultures. It was introduced in the United States in the late 1800's by way of an inventive man using up leftovers.

How to make it.


Chicken salad is a beautiful thing. You can make it with intention or you can make it as a way to use up leftovers. I promise you, if you make it once, you will always find you make it with delicious intention. Let's show you how to do it!


~Ingredients~


  • 1 pound of cooked, cooled and shredded chicken breasts
  • 2 eggs, boiled and chopped
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon Mayonnaise
  • ⅔ cup non-fat, unsweetened greek yogurt
  • ¼ cup dill pickle relish
  • ¼ teaspoon garlic powder
  • ¼ teaspoon smoked paprika
  • ¼ cup chopped red onion
  • 2 tablespoons prepared mustard


~Method~


  1. Prep ingredients. Shred cooled chicken with two forks or a hand mixer. Chop eggs. Combine both in a medium bowl.
  2. Add salt, pepper, mayo, yogurt and pickle relish. Mix well.
  3. Add garlic powder, paprika, red onion and mustard. Mix again. Chill and serve!

Tips and Tricks


Is Chicken Salad Healthy?

The answer to that depends on how you make it. If you make our version, it does come in quite a bit healthier than if you were to use only Mayonnaise. The amount of fat in chicken salad depends greatly on the base and ours is a more diet friendly version. It is so good you won't miss a thing!

How long will Chicken salad keep in the refrigerator and can it be frozen?

The short answer is about a week. If your bunch is like mine, it won't last a whole afternoon! In the summer, I make this once a week and it disappears just as fast as I can make it! If you do find you have some leftover or need to save it for much later, it can be frozen in an airtight container. It is best if used within 3 months if previously frozen.

How do I serve chicken salad or what goes best with it?

A spoon! No, seriously, there are tons of options on how to best serve it. A pretty presentation is like we have shown you in a hollowed out tomato. Often times, simply placing it in a bowl surrounded by crackers and veggies or fruit is a great way to serve it. We also love it on bread as a sandwich too. Toasted or plain light or whole grain bread are really good options.
