Cucumber Chickpea Chicken Salad With Greek Yogurt Dill Dressing
I love chickpeas and am always looking for a new dish to add them to. So why not a cucumber tzatziki inspired salad? I added chicken to mine for the 3 Cs but this can easily be made vegetarian.
You will need, a can of chickpeas, 1/4 red onion, half a cucumber, 2 stalks of celery, 1/2 a lemon, 1 tablespoon of Greek yogurt, chopped dill, 1 table spoon of olive oil and salt to taste.
I started by dicing some chicken breast. When every I make chicken breast, I try to make some extra to throw in my salads through out the week.
Then I sliced some red onion , celery, and cucumbers before thowing it all into a salad bowl.
You can't have tzatziki dressing without dill!
Then just add some salt to taste.
You will need to squeeze half a lemon and a table spoon of olive oil.
Finally, just add a table spoon of Greek yogurt, I used fat free but any kind will do and mix it all together.
You can also add a few mint leaves and/or scallions to this dish!

Ingredients
- can of chickpeas
- 1/4 red onion
- 1/2 cucumber
- 2 stalks of celery
- 1/2 a lemon
- 1 tablespoon of Greek yogurt
- chopped dill
- 1 table spoon of olive oil
- salt to taste
Instructions
- chop all the ingredient into a bowl
- mix in oil, salt and lemon juice
- mix everything together with the Greek yogurt and enjoy!
