Greek Style Super Salad

Now this seriously is a really easy salad, and it is super delicious. Taking up to 12ish minutes to make you’ll be eating your super flavoursome and fresh salad in no time.


I love the garlicy herby flavours of Greek food, and with the sunshine starting to show its perfect time to be getting into our salads.


The roasted chickpeas have a wonderful crunch that work so well within this salad. Combined with a classic style Greek salad, consisting of cucumber tomatoes and feta cheese. I don’t think you can actually beat this combo, can you?


And the showstoppers of Greek cuisine are their dips, and in this dish we use two! To make this dish so quickly I actually used a show bought traditional hummus, but you could always make that too if you have more time. As for the mint yogurt it’s SO quick to make and seriously packs a punch. Adding these two too the salad seriously makes all the flavours pop!

Ingredients
For the Salad
  • 1/4 lettuce
  • handful spinach
  • handful cherry Tomatoes
  • 1/4 cucumber
  • 1/3 pack of feta (salad cheese)
  • handful olives
  • 1/2 tsp oregano
  • 1/2 pack hummus
  • pitta bread
  • salt and pepper
  • drizzle of balsamic vinegar
For the chickpeas
  • 1/2 tin chickpeas
  • drizzle olive oil
  • 1/2 tsp rosemary
  • 1/2 tsp oregano
  • 1 clove of garlic minced
  • salt and pepper
Instructions
Mint yogurt
2 table spoons natural yogurt
7 min leaves
1 clove garlic minced
salt and pepper

Preheat oven to 180c
Drain chickpeas and then toss them in the spices and bake for approx 10mins until a slight crunch.
Meanwhile make your mint yogurt. In a bowl add your yogurt, minced garlic salt pepper and then finely chop your mint, and mix. Leave until serving.
To assemble your salad chop your lettuce in strips.
Cut your cucumber into 1cm cubes, your tomatoes in 1/4s, and the cheese into small 1cm cubes as well. Mix in a bowl and sprinkle on 1/2 tsp oregano and some salt and pepper.
Add your lettuce and spinach into a dinner bowl and then in one corner put a couple spoonfuls of your cucumber tomato cheese salad.
Then in another corner add your roasted chickpeas.
Now add a spoonful of hummus, a spoonful of your mint yogurt and a small handful of olives in separate areas on the leaves.
Drizzle with a tiny bit of balsamic vinegar.
Serve with some toasted pitta.
