Ingredients

  • 1 T. extra virgin olive oil
  • 1 lb. bulk turkey sausage
  • 2 large sweet potatoes, peeled and diced into small cubes
  • 1 12-oz. bag frozen broccoli florets
  • ¾ c. Mozzarella cheese, shredded
Instructions

Take a large skillet and add olive oil, heating over a medium heat. Add the turkey sausage and season then cook, turning regularly until slightly browned, usually 6-8 minutes. Once cooked, break it up into small chucks using the spatula.
Add the sweet potatoes to the skillet and keep cooking until they are soft and slightly crisp on the edges, normally 10-12 minutes
Add the broccoli and season again if required. Stir to combine and cover, cooking for 2-3 minutes
Remove the lid and sprinkle the mozzarella on top. Cover for 1-2 minutes until the cheese is melted then serve
Tips
  • If you don't have a skillet, a similar size frying pan will work just as well
  • If you can't find turkey sausage, use ground turkey instead
