This recipe is a leaner, cleaner version of the traditional English Cottage pie. Switching out beef mince for turkey mince and potato for sweet potato reduces calories, increases fibre and gives an enhanced, more flavoursome version of the well loved dish that turns it into a completely new meal in its own right!


The dish is also perfect for sharing and encouraging your loves ones to share a healthy and wholesome meal.


Serve with your favourite steamed greens, such as broccoli, kale or green beans.

Ingredients

  • 3 large sweet potatoes, peeled and cut into chunks
  • 1lb lean turkey mince
  • 2 cups frozen mixed vegetables
  • 2 tbsp coconut oil
  • 1 onion, sliced
  • 2 cloves garlic, finely chopped
  • 1/2 cup hot chicken stock
  • 1 tbsp tomato puree
  • Salt and pepper
Instructions

Preheat your oven to 200 degrees celcius.
Bring a large pan of salted water to a boil and add the sweet potatoes. Bring to a boil and simmer for approximately 15 minutes or until fork tender, then drain and set aside.
Heat a large frying pan until hot and add 1 tbsp if the oil.
Add the turkey mince and stir fry until browned, then remove from the pan and set aside.
Add the other tbsp of oil to the pan.
Add the sliced onion and fry over a medium heat for approximately 3 minutes, or until golden.
Add the garlic and fry for a further minute.
Add the mixed vegetables and cook for 2-3 minutes until softened.
Return the turkey mince to the pan and add the tomato puree. Mix well and cook for 1 minute.
Add the stock and season well with salt and pepper.
Bring to a simmer and cook gently for 10 minutes or until the stock has reduced right down.
Spoon the mixture evenly into an oven proof casserole.
Mash the sweet potato until smooth and season well with salt and pepper.
Spoon the mashed sweet potato over the top of the meat mixture evenly to form a top layer.
Bake in the centre of your preheated oven for 15 minutes, then serve immediately.
