Ingredients

  • 4 sprigs spring onion
  • 1 white onion, peeled and chopped
  • 5 sprigs basil, destemmed and chopped
  • 10 sprigs oregano, destemmed
  • 5 sprigs rosemary, destemmed
  • 2 tbsp olive oil
  • 1/2 tsp pepper
  • 1 tsp salt
  • 2 kg chicken thighs
Instructions

In a small mixing bowl, combine onions, herbs, oil and seasoning until fully incorporated.
In a large airtight container (or alternatively, an extra large Ziplock bag), place the chicken inside. Use your hands to massage in the herb mix.
Place the sealed container/bag into the fridge for at least an hour.
In the meantime, preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit).
Once the chicken is ready, transfer to a baking dish and cover with a lid or tinfoil before placing into the oven.
Let the chicken cook for 1 hour and check if the juices run clear, you may need to let the chicken cook for longer.
Remove the cover and let the chicken cook on grill setting for five minutes.
Remove the chicken from the oven and serve hot.
