Chicken Sausage Spicy Rice

As soon as my favorite chicken sausages were back in stock at Costco, I just had to purchase them all! In this recipe I used mango jalapeno chicken sausages, but you can use any type of sausage you like. I think this meal would be great with chorizo.


I know it doesn't look too intimidating on the spice level, but man were those jalapenos firey! This dish came together in no time and I will definitely be making it again. Next time, I'd pair it with a mango pure or lime crema to combat the heat.

Ingredients

  • 2 cups cooked rice
  • 2 sliced shallots
  • 3 chicken sausages, sliced or diced
  • 1 jalapeno, diced
  • 1 cup spinach
  • 1 lime, juiced
  • 1 tbsp oil of choice
  • Feta cheese to garnish (optional)
  • Cilantro to garnish (optional)
  • Yogurt or crema to serve (optional)
  • Chili flakes to garnish (optional)
Instructions

Heat oil in a pan then add the diced jalapeno, sliced shallots, and diced chicken sausages until cooked through
Add cooked rice, spinach, and juice from one lime
Cook until spinach wilts then garnish with feta cheese, cilantro, and crema
Tips
  • I prefer using day old rice so that I can fry it all up in a pan together without the rice becoming sticky or mushy
