Slow-Cooker Teriyaki Chicken With Roasted Broccolini

I just crave slow-cooker meals in the winter because they are just too easy to pass up. There is nothing like throwing a few things in the crockpot and just waiting for the good smells to fill the house. I like to do chicken in the slow cooker the most because I find it such a pain to mess with and cook properly. Slow cooking takes all of the guess work out of that.
Make a quick soy/teriyaki sauce and pour that in with your chicken breasts and that is it! Slow cook for 4-5 hours and then shred. Voila! Easy pulled chicken teriyaki. I added roasted broccoli with my dish because roasting is really just as simple to me and I especially love the crunch it gives to broccoli. Feel free to steam broccoli with this, or add a different veggie entirely!

Slow Cooker Teriyaki Chicken
- 2 large chicken breasts
- 1/4 cup low-sodium soy sauce
- 3 tablespoons light brown sugar
- 3 tablespoons rice wine vinegar or apple cider vinegar
- 2 tablespoons water
- 1 inch knob ginger, minced
- 2 cloves garlic, minced
- 1 tablespoon toasted sesame oil
- 1 green onion stem, sliced to garnish
- white sesame seeds to garnish
Roasted Broccolini
- 2 cups broccolini
- 1-2 Tbsp EVOO
- salt/pepper to taste
Instructions
Slow Cooker Teriyaki Chicken
- Mix sauce
- Add chicken breasts to slow cooker
- Add sauce and give a quick stir.
- Slow cook, covered, for about 4-5 hours. Check in and make sure it is not getting dry.
- Shred chicken with a fork
Roasted Broccolini
- Preheat oven to 400F
- Toss broccolini with EVOO and salt/pepper to taste
- Roast for about 7 minutes, toss and roast another 5-7 minutes until done
