Not a fan of tuna salad? No problem! This 5 minute chicken salad recipe is even better. It is so easy to make and is the perfect way to use up leftover rotisserie chicken. I prefer to purchase a prepared rotisserie chicken, however you could opt to roast your own as well!
This recipe makes a delicious sandwich, wrap, or salad. I love to enjoy it in a lettuce boat as shown in the pictures below. You can change up the onions, nuts, use raisins instead of grapes or none at all. Recipe is customizable to preference.

Recipe details
Ingredients
- 1 store bought rotisserie chicken
- 1/2 diced red onion
- 2 diced celery stalks
- 1/2 cup sliced grapes
- 1/4 cup crushed walnuts
- 1/4 cup mayo
- 1/4 cup Greek yogurt
- juice from 1/2 lemon
- salt and pepper to taste
- romaine lettuce to wrap
Instructions
- Use a food processor or blender to shred the chicken. Alternatively shred using two forks.
- Combine all ingredients and adjust according to taste/preference
- Place in lettuce wrap and enjoy!
