Chicken Salad Boats

Not a fan of tuna salad? No problem! This 5 minute chicken salad recipe is even better. It is so easy to make and is the perfect way to use up leftover rotisserie chicken. I prefer to purchase a prepared rotisserie chicken, however you could opt to roast your own as well!


This recipe makes a delicious sandwich, wrap, or salad. I love to enjoy it in a lettuce boat as shown in the pictures below. You can change up the onions, nuts, use raisins instead of grapes or none at all. Recipe is customizable to preference.

Ingredients


  • 1 store bought rotisserie chicken
  • 1/2 diced red onion
  • 2 diced celery stalks
  • 1/2 cup sliced grapes
  • 1/4 cup crushed walnuts
  • 1/4 cup mayo
  • 1/4 cup Greek yogurt
  • juice from 1/2 lemon
  • salt and pepper to taste
  • romaine lettuce to wrap

Instructions


Use a food processor or blender to shred the chicken. Alternatively shred using two forks.
Combine all ingredients and adjust according to taste/preference
Place in lettuce wrap and enjoy!
