Strawberry Pop-Tarts

My mom would NEVER buy pop-tarts for me or my siblings growing up. The only time I ever got to eat pop-tarts was at friend’s houses. I loved them! Nothing better than a warmed strawberry or cinnamon pop-tart for a snack after school at a friend’s house. To this day, I still love pop-tarts. I never buy pop-tarts either. They are SO unhealthy, but recently a friend at work gave me one and holy smokes, I had forgotten how good they were! These homemade strawberry pop-tarts are still not healthy, but they use REAL ingredients without preservatives or artificial dyes and they are WAY better than the original! Ingredients
For the crust
  • pie dough*, enough for 2-9inch crusts
  • 1 egg, beaten
For the filling
  • 1 lb strawberries, chopped
  • ½ cup granulated sugar
  • 2 tsp cornstarch
  • 1 tbsp lemon juice
For the icing
  • 1 cup powdered sugar
  • 2-3 tbsp milk
  • ½ tsp vanilla extract
  • sprinkles, to decorate
Instructions

Start by making the filling. Combine all filling ingredients into a saucepan. Turn the stove on to medium low and bring to a simmer. Let simmer for 10-15 minutes. Stirring occasionally. Let cool to room temperature before using.
Lightly flour your work surface. Roll out half the pie dough into a large rectangle. Cut into 3inch by 5inch rectangles. Repeat with remaining dough. You should have 18 rectangles.
Spoon filling onto a rectangle leaving a ½ inch border. Brush the beaten egg on the border. Place another rectangle on top and press down to seal edges. Using a fork, crimp all around the edges. Poke a few holes all along the top with a toothpick so the poptart can release steam in the oven. Repeat with remaining rectangles. You should end up with 9 pop-tarts. Place on a parchment lined baking sheet and chill for at least 20 minutes (and up to an hour).
Preheat the oven to 350°. Once the pop-tarts are done chilling, brush with egg wash all over. Bake pop-tarts for 23-28 minutes. Allow to cool completely before icing.
Make the icing. Pour sugar into a mixing bowl. Slowly add milk in while stirring until icing is thick, but spreadable. Mix in vanilla.
Once pop-tarts are cool, spread icing over each pop-tart and decorate with sprinkles. Enjoy!
Tips
  • * For these pop-tarts, I use a double recipe of my all butter pie crust. You can use your favorite pie dough recipe or even storebought, but I highly recommend my all butter pie crust.
