This cream cheese fruit tart is so fresh! It’s perfect for those hot summer days or a nice brunch with friends. I love how versatile it can be by changing up the fruit into different varieties and colors. This could be made with apples, strawberries, peaches, or any fruit you like. Ingredients
Crust
  • 3/4 plus 2 T All Purpose Flour 227 g
  • 1/4 plus 2 T Sugar 93 g
  • 8 T Unsalted Butter Melted 112 g
Cream Cheese Spread
  • 8 oz Cream Cheese 226 g
  • 1 tsp Vanilla Extract 5 g
  • 1/4 c Sugar 59 g
  • Fresh Fruit
Instructions
Crust
Preheat the over to 350 degrees.
Mix together the flour and sugar.
Pour the melted butter on top and mix until just combined. You shouldn't see any more flour but be careful not to over mix.
Grease a 8.5 tart pan and press the short bread dough down into the pan. Make sure the dough is even.
Bake in the over for 20 minutes and let cool completely.
Cream Cheese Spread
Add the cream cheese, sugar, and vanilla extract in a bowl.
Using an electric hand mixer, mix the ingredients for 5 minutes or until it is light and fluffy.
Take the short bread crust out of the tart pan and spread the cream cheese evenly on top.
Arrange the fresh fruit on top of the cream cheese. The fruit can be sliced or whole. It's up to you.
