Add a touch of sweetness to your breakfast or brunch with these warm and crispy little fritters. Served on its own or dipped in Greek yoghurt topped with honey or granadilla pulp, these bite-sized apple fritters are seriously yummy! Trust me, it's very difficult to resist the urge to "pinch" a few before serving.


Instead of icing sugar, you can also dust these fritters with cinnamon sugar, or drizzle them with a basic white glaze or a delicious caramel sauce. It's such a great breakfast treat to serve your family during the colder months. Perfect with a steaming cuppa! Mmm ...

Ingredients

  • Cooking oil, for deep frying
  • 500ml (2 cups) self-raising flour
  • 15ml (1 tablespoon) sugar
  • 2.5ml (½ teaspoon) salt
  • 80ml (⅓ cup) water
  • 160ml (⅔ cup) milk
  • 2 eggs, beaten
  • 10ml (2 teaspoons) vanilla essence
  • 15ml (1 tablespoon) cooking oil
  • 250ml (1 cup) apples, peeled and diced
  • Icing sugar, for dusting
Instructions

Heat enough cooking oil in a deep-fryer or pot.
In a large mixing bowl, mix the flour, sugar and salt.
Add the water, milk, eggs, vanilla essence and oil to the dry ingredients.
Mix well, then add in the apples.
Drop spoonfuls of the batter, about 15ml, into the hot oil.
Deep-fry until golden brown.
Remove with a slotted spoon and drain on a paper towel.
Dust with icing sugar.
Serve warm.

    I don’t use self rising flour. What ingredient can I add to my regular flour?

      Add 1 1/2 teaspoons of baking power and a 1/4 teaspoon of salt to each cup of all purpose flour.
