This simple apple fritter monkey bread is easy to make and irresistibly good! With bits of fresh apple and a sweet glaze, it’s perfect for breakfast or dessert.

Simple Apple Fritter Monkey Bread

I’m slowly counting down the days until the fall apple season is officially here. Until then, I’m sharing my love for all things apple with another scrumptious seasonal dish.

I first shared this recipe in the fall of 2020, and it quickly became a reader favorite. I can understand why! What’s not to love about warm, soft dough topped with bits of fresh apple and a sweet glaze?


It. Is. That. Good. And worthy of another share.

Whoever said you can’t have dessert for breakfast has never tried this recipe!

The best of both worlds, apple fritter monkey bread, is great for a quick breakfast or brunch. And it makes the perfect sweet treat at the end of a meal.


Ingredients

Ingredients for Simple Apple Fritter Monkey Bread

Apple Filling

  • 3 apples (peeled, cored, and diced)
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon butter


Monkey Bread

Just like my easy cinnamon-sugar monkey bread, the base of the bread uses store-bought biscuits from the tube.


  • 3 tubes buttermilk biscuits (8 ounces each)
  • 1 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1 cup unsalted butter (melted)
  • 1/2 cup brown sugar (packed)


Glaze

  • 1 cup powdered sugar
  • 1-2 tablespoons milk
  • 1/4 teaspoon vanilla extract

Preparing the Apple Filling

To begin, preheat the oven to 350℉. While the oven preheats, generously grease a bundt pan with butter or cooking spray. Then, peel, core, and dice the apples into 1/4 inch pieces. I used Fuji apples for this recipe, but you can use any apple you like, such as Gala, Pink Lady, or Granny Smith.

Put the diced apples in a medium-sized mixing bowl and toss them with lemon juice to prevent the apples from browning. Then sprinkle them with two tablespoons of granulated sugar and one teaspoon of ground cinnamon.

Add the apple mixture to a skillet with one tablespoon of butter and saute over medium heat until the apples are soft and cooked through. (Approximately 7-10 minutes.)


Preparing the Monkey Bread

While the apple mixture cools, open the tubes of biscuits and cut each biscuit into four bite-sized pieces.


Next, combine the granulated sugar and cinnamon in a small bowl and mix well. Gently drop the pieces of dough into the bowl and cover each piece with the cinnamon-sugar mixture. Alternate between adding layers of the diced apple and dough pieces in the bundt pan.

Then, in a small saucepan, add one cup unsalted butter, 1/2 cup brown sugar, and 1/2 cup of the remaining cinnamon-sugar mixture. Stir gently and bring to a boil. Once the sugar has dissolved, drizzle the sauce over the bundt pan.

Place the bundt pan into the oven and bake for 30-35 minutes or until the apple fritter monkey bread is done.

Carefully remove the pan from the oven and allow the monkey bread to rest for approximately 5 minutes. Then, invert the bundt pan onto a large plate.


Making the Glaze

To make the glaze, mix one cup of powdered sugar with 1-2 tablespoons of milk and 1/4 teaspoon of vanilla extract. Drizzle over the monkey bread and serve warm.

Trust me when I say, the photos do not do this apple fritter monkey bread justice!

Oh, and the aroma that fills your home while it’s baking can only be described in one word.


HEAVENLY!

Leftovers are not likely. But, on the off chance that it doesn’t get devoured immediately, place the extra monkey bread in an airtight container and refrigerate.

In a saute pan, melt 1 tablespoon butter over medium heat. Add apples and saute for 7-10 minutes, until soft. Cool slightly.
Open biscuit tubes and cut each biscuit into four bite-sized pieces.
In a small bowl, combine the rest of the granulated sugar and cinnamon. Mix.
Gently drop dough pieces into bowl and cover with cinnamon-sugar mixture.
Alternate layering diced apple and dough bites in the bundt pan.
In a small saucepan, add 1 cup unsalted butter, 1/2 cup brown sugar, and 1/2 cup of remaining cinnamon-sugar mixture from the dough. Stir gently and bring to a boil. When sugar is dissolved, drizzle sauce over bundt pan.
Bake for 30-35 minutes or until done. Allow bread to rest for approximately 5 minutes. Then invert onto a large plate. Drizzle with glaze (optional) and serve warm.
