Who doesn’t love a good apple fritter! They’re soft, sweet, and delicious. But when they’re in muffin form? You just can’t beat that! They have that classic cinnamon swirl, tart apple flavor, and decadent glaze like an apple fritter does. Although these were a little tedious to make and they are kind of messy, they were so fun and they turned out even tastier than I expected them to be. These are a must try! They would be fun to make for a brunch, a bridal shower, or just for a quick and easy grab and go breakfast or snack.

Ingredients
For the muffins:
  • 2 peeled & chopped apples
  • 2 tsp cinnamon
  • 2/3 cup sugar + 2 Tbsp
  • 1/3 cup brown sugar
  • 1/2 cup softened butter
  • 2 tsp vanilla extract
  • 2 eggs
  • 1 1/2 cup flour
  • 1 tsp baking powder
  • 1/2 cup milk
For the glaze:
  • 2/3 cup powdered sugar
  • 2-3 Tbsp milk
Instructions

Preheat oven to 350° and grease a muffin tin.
In a small bowl, combine chopped apples, 1 tsp cinnamon, and 2 Tbsp sugar. In a separate bowl, combine brown sugar and 1 tsp cinnamon. These will be used to fill your muffins.
In a large bowl, combine sugar, butter, vanilla, and eggs. Add in the flour, baking powder, and milk and mix until well combined.
Drop a spoonful of batter into each muffin hole until about half of your batter is gone. Use half of your apples and place on top of each muffin. Then use half of your brown sugar cinnamon and sprinkle over apples. Spoon the rest of your batter onto each muffin. Then top with the rest of the apples and brown sugar cinnamon.
Bake for 20-25 minutes or until toothpick comes out clean.
Once cooled, mix together the powdered sugar and milk for your glaze. Drizzle over the muffins and enjoy!
