Sausage and Sweet Potato Bake

I love a good hearty dinner during the cold winter months, and it’s even better if it’s a one pan meal.

This sausage and sweet potato bake is so delicious and very easy to throw together on a busy weeknight.

I use to cook all of the components for this dish separately, but a few months ago I decided to try cooking everything in one pan, and I have never gone back. I love the flavor this dish gets with everything baking in the same tray. By placing the sausages on top of the vegetables, they get nice and brown and the vegetables underneath are infused with that delicious honey garlic flavor from the sausage.

This dish is great on its own, but if you want to stretch it a little farther or bulk it up, I like to serve it over a bed of rice.

Peel and dice two sweet potatoes. Toss with olive oil and salt and pepper.

Top with one roughly chopped onion and two bell peppers.

Place the honey garlic sausage on the very top.

Drizzle with a little more olive oil and garnish with a few fresh sprigs of thyme.

Bake at 375 for 40 minutes.

Remove from the oven and slice the sausage into one inch pieces. Bake for an additional 10-15 minutes.

Serve over a bed of rice. I also like to add a little drizzle of soy sauce to flavor the rice.

Ingredients

  • 2 sweet potatoes
  • 1 large onion
  • 2 bell peppers
  • 4 honey garlic sausages
  • salt and pepper to taste
  • 2 tbsp olive oil
  • fresh thyme sprigs
Instructions

Tips
  • Dispose of the thyme sprigs before serving!
