Italian Sausage & Sweet Potato Noodles

I made this meal one night using all the leftovers in my fridge & what sounded good together and this is now ONE OF MY FAVORITES 🙌 this meal goes to show that you can get really creative with the last end of your groceries. No joke, this is my new favorite meal.


This meal has it all (Stephan from SNL voice). Sweet potato noodles, antioxidants from pomegranate seeds, rich flavor and protein from Italian sausage, and vitamins/minerals from kale.

Ingredients
Italian Sausage Sweet Potato Noodle Recipe
  • 1 cup sweet potato noodles
  • 1 cup pappardelle pasta
  • 1 lb sweet Italian sausage
  • 16 oz. jar of Vodka sauce
  • 2 cups kale
  • 2 tbsp pomegranate seeds (optional but recommended)
  • 2 tbsp parmesan cheese
Instructions
Instructions
In a medium skillet, add 1 tbsp olive oil and sauté Italian sausage for 5-6 minutes until browned
Set Italian sausage aside. On a separate stove top, place a medium pot with 4 cups water and 1 tbsp olive on medium-high heat
Once pot is boiling, add pappardelle pasta and boil for 6-7 minutes
While pasta is boiling, in the same medium skillet you cooked the Italian sausage in, saute sweet potato noodles and kale for 5-6 minutes
Once all ingredients are cooked, mix pasta, sweet potato noodles, sausage, and kale in a medium bowl. Mix in Vodka sauce to desired tasting
Optional: top bowls with pomegranate seeds and parmesan
Tips
  • Pomegranate seeds are optional but add a nice crunch to meal
  • Feel free to replace Vodka sauce with another pasta sauce of your choosing. This meal is also good with alfredo sauce but red sauce goes best with these ingredients

      Hi, thank you for the question. Most grocery stores carry pre-made sweet potato noodles in the refrigerated vegetable section OR you can make your own by taking a peeler and creating "noodles" out of your raw sweet potatoes
