Okay, it pains me that this soup isn’t more photogenic! But you’ll have to take my word for it that this Instant Pot Sweet Potato Sausage Gnocchi soup is comfort in a bowl 👌🏻

This delicious is dairy free, and pretty healthy, but still thick and creamy because you blend up the sweet potatoes into this purée, then you add Gnocchi, sausage, spinach, and tomatoes to round out the flavor and texture. It’s filling and has a gorgeous seasonal flavor. And it all come together to quickly in your instant pot!

  • 1 lb Ground Sausage
  • 1 Yellow Onion
  • 3 cups Chicken Broth
  • 3 cups Diced Sweet Potatoes
  • 1 tsp dried Rosemary
  • 1/2 tsp dried Basil
  • 1 14.5 canned Diced Tomatoes (drained)
  • 16 Oz Gnocchi Package
  • 1 cup packed Spinach leaves (roughly chopped)
  • Salt and pepper to taste

With your Instant Pot on Sauté mode, brown and crumble your 1lb of Ground sausage. Add in one chopped yellow onion and cook for a few more minutes until softened. Strain out the fat, then set aside.
Add the 3 cups of Chicken Broth and the 3 cups of diced sweet potatoes into your instant pot, and pressure cook for 15 minutes with a quick pressure release.
When your sweet potatoes are done, you can either blend them with an immersion blender or mash them with a potato masher, depending on what you have on hand and how smooth you prefer it.
Now add in your remaining ingredients- 1 tsp Dried Rosemary, 1/2 tsp basil, 1 14.5 can Diced tomatoes (drained),16 Oz Gnocchi package, and 1 cup packed spinach leaves (roughly chopped), along with the sausage and onion. Cook it for 2 minutes, with a 5 minute natural pressure release. Enjoy!
