Sheet Pan Sausage and Veggies is a healthy meal made with savory sausage and a variety of delicious vegetables including red bell peppers, zucchini, two kinds of potatoes and onions.

  • Italian Sausage Links - You can use any type of Italian sausage you like for this recipe including mild, spicy or sweet sausage. It's delicious with chicken sausage too!
  • Red Bell Pepper - I like to use red bell peppers because they are sweet and have a beautiful color. If you are a fan of green peppers they would be a great addition.
  • Baby Yukon Potatoes - These baby potatoes are the best option, but not the only option. If you have baby red potatoes you could use them as well.
  • Sweet Potato - I absolutely adore roasted sweet potatoes in sheet pan dinners.
  • Red Onion Diced - You could also use white or yellow onion.
  • Olive Oil - Avocado oil can be used as a substitute.
  • Lipton Savory Herb with Garlic - You'll get the Italian seasoning and garlic powder flavors you love all in one little packet.
  • Pepper - My preference is fresh cracked black pepper.


Feel free to add or substitute fresh veggies like green beans, broccoli and Brussels sprouts for this easy sheet pan recipe!


HOW MAKE SHEET PAN SAUSAGE AND VEGGIES

Step 1: Preheat the oven to 400°.

Step 2: Prep red bell pepper, potatoes, red onion, zucchini, and bread.

Step 3: In a large bowl, toss all vegetables with olive oil and a the seasoning packet. You can also do the mixing directly on a large baking sheet.

Stop 4: Spread the mixture onto a large sheet pan in a single layer.

Step 5: Cut Italian sausage into 2" pieces and place over the vegetables. I like to remove the casing before cutting the sausage into pieces.

Step 6: Bake for 15 minutes.

Step 7: Toss the vegetables with a spatula and return to the oven for an additional 15 minutes or until the potatoes are fork tender.

Step 8: Transfer to a big bowl and serve immediately. Or, serve right off the pan!

What is the difference between a Yukon gold potato and a baby Yukon potato?A Yukon gold potato is a type of potato that is yellow in color and has a waxy texture. They are often used in mashed potatoes or roasted potatoes recipes. A baby Yukon potato is simply a smaller version of a

Yukon gold potato. They have the same flavor and texture but are smaller in size.

Can I make sheet pan sausage and veggies ahead of time?Yes, you can prepare the vegetables and sausage ahead of time and store them in the fridge (all except the potatoes) until you’re ready to bake.


What is the best way to store leftover sheet pan sausage and veggies?Leftover sausage and veggies can be stored in an airtight container in the fridge for up to 3 days. Reheat leftovers in the oven or microwave before serving.


How do I know when the veggies are done?You will know when the veggies are done with the potatoes and sweet potatoes are fork tender. The potatoes will take the longest amount of time to cook, so cut them into small equal sizes.

  • Use parchment paper or aluminum foil for easy clean up.
  • Want to add more flavor? Sprinkle Parmesan cheese over the top of the sausage veggies.
  • You can substitute cayenne pepper for the red pepper flakes if you prefer, but be careful not to use too much!
  • Cut down on the carbs by eliminating the crusty bread.
  • When prepping the vegetables be sure the potatoes are cut in similar size and shape and that the zucchini is cut in large pieces so it doesn't over cook.

Fridge: The best way to store leftovers for the next day is to let them cool completely before transferring it to an airtight container and storing it in the refrigerator for up to three days.

Freeze: To freeze leftovers, it should be transferred to an airtight container or freezer-safe bag after it has cooled completely. The sausage and veggies will last for six months in the freezer.

Thaw: Be sure to thaw completely before rewarming in the microwave.

  • 1 1/2 pounds Italian Sausage Cut in 2" pieces

Instructions

Preheat oven to 400°.

Bake for 30 minutes, tossing half way through. Check the potatoes at 30 minutes. If the potatoes are not fork tender, cook for 5 minute increments until they are cooked through. Ovens vary, so check often.
