My Kitchen Essentials:

  • I love using this non-stick bakeware for all of my baking.
  • These silicone mitts are perfect for grasping hot pans and baking dishes.
  • This Henckel Knife is my favorite for slicing and dicing in the kitchen.
  • These large Rubbermaid food storage containers are great for storing food.

Breakfast Casserole Recipe:

Ingredients:

  • 375 g ground Italian sausage, cooked
  • 10 large eggs
  • 1/2 cup milk
  • 1 1/2 cup diced hash brown potatoes
  • 1 cup Tex Mex cheese, shredded
  • 1/2 tsp salt and black pepper
  • 1 green onion stalk, diced

Directions:

1. Cook the ground sausage in a large skillet on medium until cooked through. Set aside the brown sausage.

We love Mild Italian Pork Sausage from Johnsonville, it adds amazing flavour to this dish!

2. Preheat the oven to 350 degrees f.

3. In a large bowl, combine egg, milk and shredded cheese. Add seasoning of choice.

We like to season this recipe with salt and pepper and often add dill, red pepper flakes, garlic powder or tabasco sauce. Experimenting with different spices is a great way to personalize this breakfast recipe!

4. Spray a large casserole dish with nonstick cooking spray. Layer the hash browns on the bottom of the dish.

Tip: A round baking dish that is at least 10″ in diameter or a 9×13″ casserole dish work best.

5. Layer the cooked sausage over the potatoes.

6. Pour the egg mixture over the ingredients in the casserole dish.

7. Bake for 45 minutes or until the center is firm and cooked through.

8. Top with diced green onions and serve warm.

This sausage breakfast casserole is great for special occasions like Father’s Day, Easter Brunch or Christmas morning. It’s seriously the perfect breakfast casserole for holiday mornings!

How to store this sausage & cheese casserole:

It can be wrapped in plastic wrap, stored in the fridge and saved for the next day. Or keep leftovers in an airtight container for the next morning, if they last that long!

One pot style recipes like this are my personal favorite because not only are they super flavourful, they’re also totally easy to make! Serving up a dish like this on the weekend is always a win with my house full of teenage boys.

The combination of egg, sausage and cheese makes this a hearty breakfast, brunch, lunch or even dinner! It’s a totally versatile dish where simple ingredients are easy and fun to experiment with.

Try omitting the potatoes for a low carb, keto version of this sausage casserole. Substitute tater tots, ham, bacon, parmesan cheese, cheddar cheese or add diced bell peppers for a wide variety of options that are sure to satisfy the entire family!
