Breakfast casserole is great for holiday breakfasts or brunches. This recipe can be prepared the night before and baked in the morning to help save time.
It brings together eggs, cheese, pork sausage, and hashbrowns and is baked into a dense, moist breakfast dish.
What is great about this recipe is the endless options to make it work for your diet and to mix up the flavors.
This recipe is also easily modified to feed more people.
Start by browning 1/2 lb breakfast pork sausage. Cook over medium heat until cooked thoroughly.
After cooking, place the sausage onto a plate covered with a paper towel to absorb grease.
While the sausage is cooking, crack 8-12 large eggs into a medium-large mixing bowl.
Scramble the eggs and mix in 1/2 cup of milk. Mix until combined.
After scrambling your eggs, shred 1/2 cup to 1 c of your favorite cheese.
Using pre-shredded cheese is an excellent opportunity to save a little extra time. I prefer to shred my own because you get more cheese from the block for less money.
Cheddar, Colby-jack, or mozzarella cheese all work well with this recipe.
After the sausage is cooked and the grease drained, mix all ingredients in an 8x8 greased baking dish and add in 1 cup of shredded frozen hashbrowns.
If you prefer to use your shredded potatoes, ensure you remove as much water from the hashbrowns as possible to help reduce the water content of this casserole.
After you've added the hashbrowns, mix everything thoroughly and bake in an oven preheated to 375 for 25-35 minutes until cooked thoroughly.
