Holiday Meal for Two

Holiday meals are a time to treat yourself to something you wouldn't normally make on a average day. And cooking for two is tricky to get the proportions correct so you don't have too many leftovers or not enough food. Here is a complete meal that just perfect for two people and that's a little extra special.
Short ribs, cauliflower mashed potatoes and green beans with almonds & bacon.
Slow Cooker Short Ribs
brown the short ribs
Remove the ribs and add onion, garlic, and tomato paste to the pan
Add carrots and beef broth to crock pot. Add ribs onto along with tarragon and a bay leaf.
After cooking, short ribs are tender and juicy
Green Beans with Bacon & Almonds
Cook your bacon
Add almonds, bacon, and butter. Stir to combine
Cover and allow to steam
Cauliflower Mashed Potatoes
Using a kitchen towel, remove the water from the cauliflower
After the water is removed
Add sour cream and butter to cauliflower and combine
Place the cauliflower mixture in a food processor and mix until smooth

Ingredients
Slow-Cooker Short Ribs
- 2 pounds bone-in beef short ribs
- 1/2 teaspoon pepper
- 1/2 teaspoon salt
- 1 tablespoon olive oil
- 2 cups of small carrots
- 2 large onions
- 6 cloves garlic
- 1 4 oz can of tomato paste
- 2 cups red wine
- 1 14oz can beef broth4
- 4 springs fresh thyme
- 1 bay leaf
Cauliflower Mashed Potatoes
- 1 head cauliflower
- 1/2 cup shredded white cheddar cheese
- 1/4 cup sour cream
- 2 tablespoons butter
- 2 tablespoons chives
- salt and pepper to taste
Green Beans with Almonds & Bacon
- 2 cups fresh green beans
- 2 slices of bacon
- 1/2 cup sliced almonds
- 2 tablespoons butter
Instructions
Slow-Cooker Short Ribs
- Cut onions into into 1/2 wedges
- Mince the garlic
- Sprinkle ribs with salt and pepper
- In a large skillet, heat oil over medium heat.
- Brown ribs on all sides
- Remove ribs from skillet and set aside
- Add onion to the skillet and brown 8-9 minutes or until tender
- Add garlic and tomato paste and cook one minute longer
- Stir in wine and bring to a boil
- Cook 8-10 minutes or until liquid has thickened
- Place carrots and broth into slow cooker. Place ribs on top. Add onion mixture, thyme and bay leaf.
- Cook on low 6 hours or until meat is tender
Cauliflower Mashed Potatoes
- Chop cauliflower into very small pieces
- Place in a bowl, cover and microwave 3 minutes to steam
- Remove cauliflower from microwave and allow to cool.
- Using a kitchen towel, pour cauliflower into the middle of the towel. Bring the towel's ends together and squeeze the water from the cauliflower.
- Continue to squeeze until all of the water is removed.
- Place cauliflower back into a bowl
- Add sour cream and butter into cauliflower
- Mix until combine
- Using a food processor, blend until mixture is smooth
Green Beans with Almonds & Bacon
- In a skillet, brown bacon over medium heat
- Remove the bacon and drain on a paper towel.
- Into the skillet, add beans and almonds
- Stir to combine
- Crumble and add bacon to skillet
- Add two tablespoons of butter allowing it to melt then scrap the good bits off the bottom of the skillet
- Cover and lower heat allowing beans to steam 5-6 minutes
Plating for Dinner
- With a large spoon, remove the carrots and a small amount of juice from short ribs and place on a plate. Place a short rib on top.
- Using a ice cream scoop, place one scoop of cauliflower mashed onto the plate. Add fresh chives and a small pat of butter.
- Place half of the greens beans onto the plate.
- Present this simple yet elegant dinner to the one you love (or the one your trying to impress).
Tips
- If you would like the juice from the short ribs to be thicker, add a small amount of cornstarch to thicken.
- The cauliflower mashed will not be smooth like potatoes but the sour cream gives it that creamy flavor.
