On to the recipe...


Wow! What began as a recipe I had not planned to share, ended up in a wonderful happy accident! I seem to be having several of those lately. When I begin a new experiment, I tend to take pics in case I do decide to share my finds, and I am so glad I did snap a few pics so I had something to share with you today.


I have been experimenting with pork lately, you know, the other white meat. I am tired of chicken, and fish has not been at the top of my list lately, and beef just seems so overworked that I have decided to get to know pork a bit.


Pork is not something I have made very often, and so when I tell you I have been experimenting, I mean it. To me, discovery can be the most fun when creating and working with food in the kitchen, especially when those experiments turn into a wonderful dinner choice.


I find when I am in the creating mode, I have no expectation what a new menu item will taste like, so it's a coin toss. Do you ever do this? I can tell you the coin toss ended with a quite delightful dinner option when it was all said and done. When I took that first bite, I was like yummmm.... and knew I was on to something here.


Mr. VS brought out the ketchup as he tends to do, and I said please try this without butchering it, and see what you think before you add ketchup to the pork. Do you know what? That ketchup bottle went unused that evening, and he asked when I planned to make this dinner again. Win for me, win for him, now he has another dinner item he loves.


I even discovered the most perfect amount of time to put this on the air fryer. In case you were wondering, it is nine minutes! When the air fryer prompts you to flip, flip those chops and wait for the next timer to go off, and serve those delicious, perfectly baked chops! I promise you will not be disappointed!


What you will need:

  1. 4 pork loin chops
  2. 1/2 c parmesan cheese
  3. 2 T olive oil
  4. 1 t garlic powder
  5. 1 t onion powder
  6. 1 t smoked paprika
  7. 1/2 t black pepper

What you will need to do:

  • Pat pork loin chops dry, set aside
  • Mix parmesan cheese, olive oil, and spices together in square baking dish, I used the square dish so the pork chops could lay flat in the bottom of the dish
  • Place pork chops into spice mixture and pat spices all along the surface of the entire pork chop, including sides, if the mixture does not stick, press into each pork loin
  • Once covered entirely, place on foil inside air fryer, I like less mess to clean up, so I always use a piece of foil inside
  • Continue until all pieces are covered and on foil in air fryer
  • Set air fryer to 375 degrees for 9 minutes
  • When the air fryer alerts you to flip your pork chops, flip them to the other side
  • Once both sides have been baked, remove and serve

I was kind of nervous since I was not sure what to expect, but the parmesan cheese worked for our Mahi Mahi recipe so why not try it with other foods? I can tell you the pork chops were perfectly baked, and the mixture I added to it was perfectly seasoned. The flavors exploded on my tongue and I thought wow! These are perfect pork chops! I could not believe my luck!


I am beginning to love my Ninja Foodie air fryer. When you know what time to set it for, your foods really do turn out perfectly baked every time. I have had to learn to experiment with times and temperatures, but once I know how long to set the timer for and at what temperature, dinner tends to turn out every time.


In the beginning, I was setting it for too long of a time, and I kept going to that 350 degree temperature since that is what I have been comfortable baking with since I was a child. Oh, you mean there are other temperatures to cook foods on? LOL, yes there is. Trust me, I could not seem to step outside my comfort zone at that 350 degree temp, but I am learning.

When I do step out of my comfort zone? Wow, things really do seem to turn out for the best. If I can give you any advice when it comes to the kitchen, it would be not to be afraid to try new things. Who cares if it does not turn out, we can learn from our mistakes, and the next time, you know what not to do. I keep learning, and when something is really good, I share it with you. I am happy I started cooking and sharing recipes, it has really helped me find new things that I have found I really do enjoy, plus if I can offer you more dinner options, then that seems like a win for all of us.


I decided on a simple salad and mashed potatoes. If you are looking for a way to spice up your mashed potatoes, I have something to share with you. I decided to make our mashed potatoes like potato skins. Since I had not planned on sharing this recipe, I did not measure anything out. If you are interested in an exact recipe, let me know, and I will make them again so I can measure out the ingredients to share.


I made the mashed potatoes as normal, then I added a few real bacon bits, sprinkled shredded cheddar cheese, and a dab of sour cream. Mr. VS loved them with the pork chops. I love salads, but I usually keep them pretty simple. Lettuce, red onion is a must for me, sliced tomato, a little bit of shredded cheddar cheese, and we usually make our own ranch dressing.


That's all folks... dinner made, and ready in about 30 minutes which was not bad considering I cut up everything for our salads by hand. I think the salads took more time to prepare than the pork chops did, including the baking time.
