During my travels to Vietnam, I tried this delicious dish called Bun Cha. It's grilled pork served with a yummy sauce, vermicelli noodles, and fresh herbs. I loved it so much and had it in multiple variations - grilled meat, meat patties, meat balls, as a soup, as a roll - every place I had it was slightly different. I even attended a cooking class where we made our own.
The first thing I did upon returning home was look for a restaurant that served it and then decided it was time to try making it myself. I am so happy with the end result and definitely recommend trying to cook it yourself or order it next time you're at a Vietnamese restaraunt!

Ingredients
For the Pork
- 300g ground pork
- 2 tbsp fish sauce
- 2 tbsp honey
- 2 tbsp lemongrass paste or fresh finely chopped
- 4 tbsp oyster sauce
- salt & pepper to taste
- cooked vermicelli to serve
- fresh herbs to serve (cilantro, scallion, lemon balm, etc.)
- lime slices to serve (optional)
For the Sauce
- 3 tbsp white sugar
- 3 tbsp fish sauce
- 2 tbsp rice wine vinegar
- 2 tbsp lime juice
- thai chillis, sliced
- pepper to taste
Instructions
- Mix the ground pork with the fish sauce, honey, lemongrass, and oyster sauce
- Season with salt & pepper then let sit for 20-30 minutes to marinate
- Heat a skillet or wok then form the meat into patties or meatballs
- Cook until browned on both sides (approx 3-5 minutes per side)
- Set aside with your cooked vermicelli & fresh herbs
Tips
- In a bowl, combine the white sugar, fish sauce, rice wine vinegar, and lime juice
- Add sliced chili peppers for some spice and pepper to taste
