Sicilian Meatloaf
I stumbled upon this recipe on Pinterest years ago and it was so delicious, it’s become a favorite and the perfect comfort food meal for a chilly Fall night!
This is not just any meatloaf, it’s stuffed with prosciutto, cheese and fresh basil, then topped with marina sauce, it’s full of flavor.
Heat oil and sauté onions and peppers until softened and onions are translucent, then add garlic and cook for a minute, remove from heat and cool
In a large mixing bowl, add all the meatloaf ingredients and mix well
On a piece of parchment paper, place the meat mixture in center and form an 8x15 rectangle
Top rectangle with a layer of ham, then the basil
And finally the cheese
Starting from the 8 inch end, roll up jelly roll style and press down on end seam to seal, turn meatloaf so the seam end is on bottom
place on baking sheet with the parchment paper and cook for 1 hour, serve with your favorite marinara sauce on top or bottom!
