Quick and Easy ONE Pot Enchiladas

Here is an easy family dinner that won't fill up the kitchen sink.

Chop up some pepper and onions and sauté in a pan. I like to use a jalapeño but can't anymore since the children don't like things spicy! I rather negate the heat then have to cook more then one dish!

Add ground turkey or beef and cook for 10 minutes until the meat breaks apart.

Then throw some salsa in the pan. I do this a lot since you don't have to chop it all yourself and it's already seasoned! I feel like this seasons the dish enough but add your favorite spices.

Simmer some more. For a creamier version, add a spoon full of cream cheese.

Once the meat is golden and cooked through, wrap the meat in tortilla wraps.

Smother with a can of enchilada sauce and throw it in the oven for another 5 minutes.

Set the oven to 350 degrees. I also added some cheese to mine. This can easily be a dairy free option too!

Season with salt and pepper to taste.

Serves with some avocado or sour cream on top!

  • 1/2 onion
  • 1/2 bell pepper
  • 1 packet of ground turkey or beef
  • 2 table spoons of salsa
  • 1 table spoon of cream cheese
  • tortilla wraps
Instructions

simmer onions and peppers in a pot
add the ground meat and cook until it breaks apart
add salsa and a cream cheese
wrap the cooked meat in tortilla wraps and stick it in the oven for 5 minutes at 350
