I like to try new recipes in my kitchen, hence, Denise's Test Kitchen. I look for recipes that have ingredients that my family would like and that has ingredients that I wouldn't put together on my own.

I don't use Tater Tots very often in my cooking so, when I saw this recipe I knew I had to try it. I have found so many good recipes, like this on from Southernliving.com

This recipe is called Cowboy Casserole and is definitely a rib sticking meal. Just imagine sitting around a fire at the end of a long day of riding and having this for dinner. This casserole will find it's way onto my dinner menu in the fall and winter months for sure.

Layering Tater Tots on the top of the casserole mixture is genius! Then the melted cheese on top of that......heaven I tell you, heaven!

Ingredients

  • 2Ā tablespoons vegetable oil
  • 1Ā yellow onion, chopped
  • 2Ā cloves garlic, thinly sliced
  • 1Ā pound ground beef
  • 1Ā (1-oz.) package taco seasoning
  • 1Ā (15-oz.) can black beans, drained
  • 1Ā (15-oz.) can pinto beans, drained
  • 1Ā (14.5-oz.) can diced fire-roasted tomatoes
  • 1Ā (4-oz.) can diced green chiles
  • 1/4Ā cup sour cream
  • 3/4Ā cup shredded cheddar cheese, divided
  • 1Ā teaspoon hot sauce
  • 1Ā cup frozen corn kernels
  • 1Ā (32-oz.) bag tater tots
Instructions

Preheat oven to 350Ā°F. Heat vegetable oil in a large skillet over medium-high. Add onion and cook until softened and translucent, about 6 minutes. Add garlic and cook for another minute. Add beef and break apart with a spoon; cook until brown. Add taco seasoning and stir to incorporate.
Add black beans, pinto beans, tomatoes, green chiles, sour cream, 1/2 cup cheddar cheese, and hot sauce, stir into meat mixture and allow to cook until the liquid thickens, about 5 minutes. Stir in frozen corn and transfer mixture to a greased 9- x- 13-inch baking dish.
Line surface of casserole with a single layer of frozen tater tots. Cover dish with aluminum foil and bake for 30 minutes. Remove aluminum foil, sprinkle remaining 1/4 cup cheddar cheese over tater tots, and return to oven for 20 more minutes. Allow to cool slightly before serving.
Tips
  • I used my cast iron skillet and didn't put this casserole in a casserole dish. One pot meal, less to clean up.
