Brown Sugar Pecan Cookies With Chocolate Chips

This time of year is definitely cookie-baking season, and these Brown Sugar Pecan Cookies with Chocolate Chips are a nice sweet treat all winter long! You can always omit the chocolate chips if you prefer just the brown sugar-and-pecan flavor, but if you’re a chocolate-lover like me, you’ll probably prefer these with chocolate chips!

These cookies are thick, soft, and chewy. The brown sugar gives them a rich flavor and there are chopped pecans in the batter too, in addition to a pecan half on the top of each cookie. And the chocolate chips give these cookies a nice little touch of chocolate flavor!

Ingredients

  • 2 1/4 cups all-purpose unbleached flour
  • 2 Tablespoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened
  • 1 1/2 cups light brown sugar, packed
  • 2 large eggs
  • 1 1/2 teaspoons pure vanilla extract
  • 1 cup semi-sweet chocolate chips
  • 1 cup chopped pecans
  • Pecan halves, for putting in the center top of each cookie
Instructions

Preheat oven to 350˚F. Line two cookie sheets with parchment paper; set aside.
In large bowl, blend the flour, cornstarch, baking soda, and salt; set aside.
In medium-size bowl, cream the softened butter and brown sugar, then add in the eggs and vanilla extract, mixing everything well.
Add this mixture to the flour mixture, mixing everything until combined. Fold in the chocolate chips and chopped pecans.
Chill cookie dough for about 25 minutes, then scoop out the cookie dough in heaping Tablespoons and roll into balls.
Place 2 inches apart on the cookie sheets and add a pecan half in the center of each dough ball, pressing it down into the dough to slightly flatten it.
Bake at 350˚F for 12 minutes, until edges are golden.
Let cookies cool on pan for a minute or two, then remove to a wire rack to cool completely.
