Pistachio Eclair Dessert

Cold "fridge desserts" as I like to call them are fun for the warm weather months as they are easy to make and stay fresh for a few days. If they'll last that long. This layered éclair dessert is no exception! Versions of this recipe have been around for years, but I shook things up a bit and used pistachio pudding instead of traditional vanilla. Our family LOVES pistachio pudding so I knew it would be an instant hit.
Over Christmas break my father-in-law made and brought this Pistachio Pudding Dessert to our house and ever since my kids have been asking me for more of that "green stuff" that Grandpa brought. Who knew they'd love it so much? Pistachios are a member of the cashew family and resemble an almond-like nut. They have a complex flavor that is both sweet and savory (hence why they work in desserts) with the sweetness coming from the natural sugars in the nut. I find most people who eat them in dessert form, often via pudding, say it has a vanilla-like flavor.
What makes this dessert appealing is how easy it is to make. With just 5 ingredients total (milk, pudding mix, Cool Whip, graham crackers and store bought chocolate frosting) it doesn't break the bank and even the kids could make it! The hardest part is giving it a couple of hours in the fridge to firm and set up without taste testing. Trust me, once you dig in it's hard to stop! This is a great dessert for a crowd. Not only does it look pretty on a plate, but it's easy to whip up just a few hours before.

Ingredients
- 3 cups milk
- 2 3.4 ounce boxes instant pistachio pudding
- 8 oz Cool Whip whipped topping, thawed
- 20 graham crackers
- 16 oz can store bought chocolate frosting
Instructions
- In a large bowl combine the milk, pudding mixes and thawed Cool Whip, whisking together until smooth and thickened.
- In a deep 9x13 pan layer as follows; graham crackers covering the bottom of the pan, 1/3 of the pudding mixture, another layer of graham crackers, 1/3 of the pudding mixture - continuing until you've made 3 layers. Place this into the fridge for 30 minutes.
- While the dessert is chilling, open the chocolate frosting. Place into a stand mixer with a whisk attachment (or use a bowl and a hand held mixer) and whip the frosting on HIGH for 1-2 minutes. This will "fluff up" the frosting a bit, giving it more air. This will make the frosting more spreadable for the top layer.
- Gently spread the whipped chocolate frosting onto the top layer of the pudding. Place in the fridge and allow to chill for another 2-3 hours.
- Cut into slices before serving. Keep covered in the fridge for up to 3 days.

This is great! I've made it with chocolate pudding and bananas between the graham crackers, and just cool whip on the very top. The pudding atop each layer of crackers softens them a bit. I'd like to try with sliced strawberries and cheesecake flavored pudding....kinda like a layered strawberry cheesecake!
