Fresh peaches are a favorite summertime fruit and this Fresh Peaches & Cream Parfait No Cook Dessert Recipe is so refreshing and cool for the hot summer. If you love fresh fruit, you will love this summer icebox dessert recipe.

Peaches & Cream Dessert Recipe

First, this is not a fat free recipe but it’s so worth the added calories. These ingredients combine to make a yummy, refreshing summer treat.

Graham Cracker Crust

Begin by making the graham cracker crust and press into the bottom of the parfait cups. Reserve a small amount to garnish the tops of the peach desserts.

Parfait Cups Filled with Graham Cracker Crumb Mixture

You will want to refrigerate the parfait cups while you prepare filling for this icebox dessert.

Mix the cream cheese and powdered sugar together until smooth and then add the vanilla extract.

Finally add the cold whipping cream and beat until thick.

Prepare Peach Dessert

Now you are ready to prepare the peach dessert by placing the filling on top of the graham cracker crumb base. Be sure to reserve 1/3 creamy filling for the topping.

Parfait Cups Filled with Creamy Filling

Next add a layer of peaches (approx. 1/2 peach) on top of the cream filling and then place a dollop of cream filling on top of the peaches.

Finally sprinkle with graham cracker crumbs and add a few blueberries on top. (optional)

Icebox Dessert Recipe

Now you are ready for the icebox. Just cover with plastic wrap and refrigerate for at least 2 hours and serve cold.

Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup butter melted
  • 2 Tbs Sugar
  • 1 1/2 cup powdered sugar
  • 8 oz. softened cream cheese
  • 1/2 tsp vanilla extract
  • 2 cups cold heavy whipping cream
  • 6 fresh ripe peaches
  • Blueberries optional
Instructions

Melt butter
Mix butter with graham cracker crumbs & 2 tbs sugar
Press a thin coat of mixture into bottom of each parfait glass reserving a small amount for garnish.
Place in refrigerator to cool while mixing the topping
Peel and slice peaches into thin slices (approx. 1/8 inch thick)
With electric hand mixer, beat cream cheese and powdered sugar until smooth
Add vanilla extract and blend
Remove Heavy Whipping Cream from refrigerator and add to mixture.
Using electric hand mixer, begin blending on low speed and once mixed throughly, increase speed to beat until thick.
Remove parfait cups and fill with mixture leaving room for peaches and topping.
You should have approx. 1/3 of mixture set aside for the topping.
Add approx. 1/2 sliced peach to each cup.
Top with remainder of cream mixture.
Sprinkle with remaining graham cracker crumbs
Top with fresh blueberries (optional)
Cover with plastic wrap and refrigerate for at least 2 hours before serving.
Serve cold.
Tips
  • This recipe can be made in a sheet pan and cut into squares if desired.
  • Parfait cups will keep fresh for several days if left covered in refrigerator.
