So you know when you're having a craving for something and you just can't put your finger on it? Well, that's how this recipe came into creation.


I was having one of those cravings on a Sunday afternoon and when I was scavenging around the house, I opened my fridge I saw lemons. It was that moment that I realized all I wanted was lemon pie!


I didn't have too many ingredients in my fridge so I had to improvise. It worked out to my advantage because I created a delicious pie with only 3 ingredients (not including the pie crust)!

Ingredients

  • 1 premade graham cracker pie crust
  • 5 large egg yolks
  • 3/4 cup plus 1 tablespoon of lemon juice (freshly squeezed)
  • 1 3/4 cup sweetened condensed milk
  • Whipped cream and lemon zest for garnish (optional)
Instructions

In a mixing bowl, use an electric mixer to whisk together egg yolks and condensed milk for 2-3 minutes until the mixture is blended
Add lemon juice and whisk until combined
Pour into premade graham cracker pie crust
Bake on 350°F for 20-23 minutes
Set pie on wire rack until it reaches room temp
Refrigerate
Top will whipped cream and lemon garnish before serving (optional)
Tips
  • Firmly press the lemon (or roll on a hard surface) before cutting and squeezing to get the most amount of juice
