Ok I know there is a repetition of the word cheese in this title, but it really is as cheesy cheese as it comes! It's a twist to the classic cauliflowe cheese with some extra cheese into it.
I like it to be melt in the mouth so I actually pressure cook the cauliflower for longer than this recipe, which is a bit more standard. I just love it when it simply falls apart in the mouth, although I understand some people may prefer it to have a bit more of a bite, just know you have the option to cook the cauliflower for longer if you wish too.
You can also choose different combinations of cheese of course!

Ingredients
- 2 cups Milk
- 1/3 cup All-purpose Flour
- 1/4 cup Butter
- Salt
- 1/4 tsp Nutmeg
- 1 cup Grated Cheddar Cheese
- 1 cup Grated Gruyère Cheese
- 1 Cauliflower
- Pepper
- Parmesan cheese
Instructions
- Clean the cauliflower by removing the stem and outer leaves. Cut the florets and separate them.
- You can either boil the florets in hot water for about ten minutes or steam them.
- Prepare the béchamel sauce. In a saucepan, heat the milk with the butter until almost boiling. Remove from heat and sift the flour gradually while stirring with a whisk. Add a pinch of salt and nutmeg. Return the saucepan to low heat and stir until thickened. Once ready, set it aside.
- Cover the bottom of a baking dish with half of the béchamel sauce and some of the grated cheddar and gruyère cheeses.
- Arrange the cooked cauliflower florets in the baking dish and sprinkle with the remaining cheddar and gruyère cheeses.
- Cover with plenty of béchamel sauce and Parmigiano Reggiano cheese, just enough to cover the top. Bake in a preheated static oven at 200°C (400°F) on the top shelf for about 10 minutes or until golden brown.
- The oven-baked cauliflower gratin is delicious when served hot.
