Beef and Broccoli Stir Fry
Stir fry’s are the ultimate fast and easy weeknight meal. It can be as simple or as complicated as you want to make it. And, most times I usually just pull out whatever protein I have on hand along with whatever vegetables are in the fridge and toss that together for a meal.
The key to stir frying is to velvet your meat. If you ever wonder why the meat in the stir fries at your local Chinese restaurant is so tender it’s because they velvet it. What this means is that you will mix the meat with a mixture of cornstarch, water, soy sauce and rice wine. This tenderizes the meat so even when you’re cooking on high heat, you won’t end up with rubbery meat.
The other very important element to stir frying is ensuring that you have everything prepped and ready to go before you start cooking. The cooking process is super quick and you will not have time to stop and chop your vegetables or to put together your sauce. Have everything ready and beside the stove within arms reach.

Beef and Broccoli Stir Fry

Ingredients
- 1.5 lbs thinly sliced beef
- 1.5 lbs chopped broccoli
- 2 tsps cornstarch
- 2 tsps water
- 2 tsps rice wine
- 2 tsps soy sauce
- 2 cloves garlic, minced
- 2 tbsps dark soy sauce
- 2 tbsps soy sauce
- 2 tbsps oyster sauce
- 1 tbsps ketchup
- 1 tbsp worchestershire sauce
- 1 tsp sugar
- 1 tsp ground black pepper
- 1/4 tsp kosher salt
- 2 tbsps water
- 2 tbsps vegetable oil
- 1 tbsp sesame oil
Instructions
- In a small mixing bowl, mix together the sliced beef, 2 tsps cornstarch, 2 tsps water, 2 tsp soy sauce and 2 tsps rice wine. Allow the meat to velvet while you prep everything else.
- In a small bowl, mix together 2 tbsps dark soy sauce, 2 tbsps soy sauce, 2 tbsps oyster sauce, 1 tbsp ketchup, 1 tbsp worchestershire sauce, black pepper, sugar, salt, 2 tbsps water. Set aside.
- Heat a large skillet over high heat. Add in 2 tbsps oil and add the beef. Separate the beef and allow it sear in the pan. After a minute, flip the beef and cook for another minute. Add in the garlic, cook for 30 seconds. Add in the broccoli and cook for a minute. Add in the sauce and cook for another 1.5 minutes. Turn off the heat and drizzle in the sesame oil. Serve with rice and enjoy.

What does let the meat velvet mean? I have never heard that phrase in regards to meat.
Nevermind. I went back and read through the article and found out what it means. Pretty cool. I will definitely try this.
