Weeknights are kind of a whirlwind in my house and I'm always looking for new and delicious meals to add to our rotation. During the summer months, I try to cook as little as possible to enjoy as much family time as I can so this recipe is perfect for it's delicious left overs!
Ground beef comes together with a super tasty and savory sauce with a ton of tender vegetables of your choice. Serve this up with rice or noodles on the side and voila - dinner is done!

Ingredients
For the stir fry
- 1 1/2 pounds lean ground beef
- 2 Tbsp oil of choice (I use olive or avocado oil)
- 1 cup sliced mushrooms
- 1 cup sliced bell peppers
- 1 cup sliced carrots
- 1 cup chopped broccoli
- 1/2 cup diced onions
- Sliced green onion and sesame seeds for garnish (optional but delicious)
For the sauce
- 1 cup low sodium soy sauce
- 2 Tbsp hoisin sauce
- 2 Tbsp seasame oil
- 2 Tbsp brown sugar
- 2 cloves, minced garlic
- 1 tsp each; black pepper, ground ginger, red pepper flakes
Instructions
- In a large frying pan, cook ground beef until no longer pink and cooked through, about 7-8 minutes. Drain off most of the fat and set the beef aside.
- To the same pan, add in cooking oil and chopped vegetables. Sauté over medium high heat until tender stirring frequently, about 7-8 minutes.
- While the vegetables cook, place the sauce ingredients in a large glass mixing cup and whisk until fully combined. Set aside.
- Once your vegetables are tender, add in cooked ground beef and stir everything until combined. Turn heat to low.
- Stir in the prepares sauce and heat over low until the sauce is warm, about 2-3 minutes.
- Remove the stir fry from the heat and serve right away over rice, noodles or vegetables. Top with sliced green onion and sesame seeds before serving if you wish.
- Store leftovers for up to 3 days in an air tight container in the fridge.
