Weeknights are kind of a whirlwind in my house and I'm always looking for new and delicious meals to add to our rotation. During the summer months, I try to cook as little as possible to enjoy as much family time as I can so this recipe is perfect for it's delicious left overs!


Ground beef comes together with a super tasty and savory sauce with a ton of tender vegetables of your choice. Serve this up with rice or noodles on the side and voila - dinner is done!

Ingredients
For the stir fry
  • 1 1/2 pounds lean ground beef
  • 2 Tbsp oil of choice (I use olive or avocado oil)
  • 1 cup sliced mushrooms
  • 1 cup sliced bell peppers
  • 1 cup sliced carrots
  • 1 cup chopped broccoli
  • 1/2 cup diced onions
  • Sliced green onion and sesame seeds for garnish (optional but delicious)
For the sauce
  • 1 cup low sodium soy sauce
  • 2 Tbsp hoisin sauce
  • 2 Tbsp seasame oil
  • 2 Tbsp brown sugar
  • 2 cloves, minced garlic
  • 1 tsp each; black pepper, ground ginger, red pepper flakes
Instructions

In a large frying pan, cook ground beef until no longer pink and cooked through, about 7-8 minutes. Drain off most of the fat and set the beef aside.
To the same pan, add in cooking oil and chopped vegetables. Sauté over medium high heat until tender stirring frequently, about 7-8 minutes.
While the vegetables cook, place the sauce ingredients in a large glass mixing cup and whisk until fully combined. Set aside.
Once your vegetables are tender, add in cooked ground beef and stir everything until combined. Turn heat to low.
Stir in the prepares sauce and heat over low until the sauce is warm, about 2-3 minutes.
Remove the stir fry from the heat and serve right away over rice, noodles or vegetables. Top with sliced green onion and sesame seeds before serving if you wish.
Store leftovers for up to 3 days in an air tight container in the fridge.
