Potato and Beef Stir Fry (The Best Mid-week Dinner Recipe)

When in need of a quick and delicious dinner, try this Potatoes and Beef Stir fry, which comes together in 30 minutes. In this recipe, I used Bell peppers as vegetables. But, it can be substituted with any other vegetable of your choice.

Start by caramelizing the surface of your seasoned beef in hot oil, about two minutes on each side.

By cooking the potatoes alongside the beef and stock, the potatoes soak up all the delicious flavors from the beef.

You can use bell peppers or any vegetable you have on hand, such as broccoli florets, cauliflower or thinly sliced carrots. The vegetables come together really quickly and should not be left on the hot stove for more than 10 minutes, else it looses its crunch.
