Potato and Beef Stir Fry (The Best Mid-week Dinner Recipe)

When in need of a quick and delicious dinner,try this Potatoes and Beef Stir fry, which comes together in 30 minutes. In this recipe, I used Bell peppers as vegetables. But, it can be substituted with any other vegetable of your choice.

Start by caramelizing the surface of your seasoned beef in hot oil, about two minutes on each side.

By cooking the potatoes alongside the beef and stock, the potatoes soak up all the delicious flavors from the beef.

You can use bell peppers or any vegetable you have on hand, such as broccoli florets, cauliflower or thinly sliced carrots. The vegetables come together really quickly and should not be left on the hot stove for more than 10 minutes, else it looses its crunch.

Ingredients

  • 500 grams potatoes
  • 2 cups beef stock
Beef Seasoning
  • 250 grams beef steak
  • 5 sprigs fresh thyme
  • 1 tbsp onion powder
  • 1 tsp paprika
  • 2 tsp garlic powder
  • 1 tsp salt
  • 1 seasoning cube
Vegetables/ Seasoning
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 2 garlic cloves
  • 1 tomato
  • ½ large onion
  • 1 mini seasoning cube
  • 1 tsp salt
  • 1 tsp black pepper
Instructions

Cut beef into 1 inch thick cubes. Season with onion powder, garlic powder, paprika, salt and seasoning cube.
Peel and cut potatoes into bite size chunks.
Heat the oil in a large non-stick frying pan or wok until really hot. Fry the beef and sprigs of thyme for 1 minute on each side.Add potatoes and beef stock .Cook on high heat for 15 minutes.
While potatoes and beef are cooking, slice your bell peppers .Add oil to a skillet, stir fry garlic,onions, tomatoes and bell peppers.
Add the vegetables to the potatoes and beef. Toss gently for a few minutes. Serve immediately.
