Beef broccoli stir fry proves to make an amazing midweek dinner, just add some rice and you've got a lovely meal ready to go. I love how the long cooking process allows for both the beef and the broccoli to soften dramatically while constantly being infused with the ample sensational soy sauce. I highly recommend to serve the stir fry over a bed of rice or to mix it in with thick egg noodles, as the sauce is delicious and it would be a shame not to take maximum advantage of. Refrigerate leftovers in an airtight container for up to four days.

Ingredients
- 1.5 kgs (2.2 lbs) thin beef strips
- 7 tbsp cornstarch
- 1 cup soya sauce
- 2.5 tsp minced garlic
- 3 tbsp sesame oil
- 1 tsp onion powder
- 2 tbsp sweet chili sauce
- ½ cup water
- 2 cups of broccoli florets
- ½ cup whole cashews
Instructions
- In a large bowl, use your hands to mix in the cornstarch with the beef strips.
- In a separate, small bowl, combine the soya sauce, minced garlic, sesame oil, onion powder and sweet chili sauce to create the marinade.
- Pour marinade into meat bowl and mix with your hands until fully incorporated. Cover with cling wrap and place in the refrigerator over night to marinate.
- Place a large saucepan over high heat and wait until the pan heats up. Pour the beef and marinade into the pan and add in water. Use a silicone spoon to stir it around for around 15 minutes to let it start cooking, the liquid should begin to boil.
- Add in the Broccoli and stir through.
- Place lid on top of saucepan and turn the heat down to low. Let it simmer for an hour.
- In the meantime, place a small saucepan on medium-low heat and wait for it to get hot. Place cashews in the pan and use a wooden spoon to stir it around constantly. Let the cashews begin to brown, this should take 5 minutes. Remove the pan from the heat and set aside.
- Remove beef from heat and mix in the cashews. Transfer to a serving dish. Serve immediately.
