These delicious bacon Gouda breakfast sandwiches are sure to be a hit with the whole family! You can serve them right away after assembling or you can bake them for a few minutes to get them nice and crispy. But what I typically do is use them as breakfast meal prep. I wrap them up in foil and freeze them in a ziploc bag! Then when I am ready to eat one in the morning, I take the foil off and either bake it, air fry it, or microwave it until it is heated through. However you decide to prepare it, you can’t go wrong!

Ingredients

  • 4 ciabatta rolls
  • 6 slices of cooked bacon 
  • 4 slices of Gouda cheese
  • 6 eggs 
  • 1/4 cup milk
  • 1/4 cup chopped spinach (optional)
  • Salt & pepper
Instructions

Preheat oven to 350°.
Mix together eggs, milk, spinach, salt & pepper.
Pour into a greased 8x8 pan and bake for 20-25 minutes or until set.
Cut into 4 even squares and place on ciabatta.
Add cheese and cooked bacon.
Replace top ciabatta roll.

  • You just made my day! I picked up a bunch of day old cibatta rolls but had no plan. And now I do and it's a holiday weekend. One thing I will do will be to toast the cibatta rolls lightly so they won't end up soggy when we reheat them in the microwave at work. Will serve with a sriracha aioli for those that want it.
