Polenta and Almond Tea Cake

This is a truly delicious tea cake, which a coarser texture and so soft that will make your guests wonder "what's in it?". It always goes so quickly when i make it.

It’s not a recipe I made up but one typical of the north of Italy, where polenta is from.

The polenta gives it such a unique, rustic and coarse texture. It’s perfect to enjoy with a cup of tea or coffee!

Classic polenta, which you may find as coarse cornmeal in the supermarkets, works best for this to give it that coarser texture, but it will also come out with "express polenta".

Ingredients

  • 1/2 cup butter
  • 1 cup icing sugar
  • 1 tsp vanilla essence
  • 1 pinch of salt
  • 4 eggs, 2 whole and 2 yolks
  • 3/4 cup ground almonds
  • 1/2 cup polenta flour / coarse cornmeal
  • 3/4 cup all purpose flour
  • 2 tsp baking powder
Instructions

In a bowl, mix the melted butter cooled down to room temperature with the icing sugar, the salt and vanilla essence.
Add the 2 whole eggs and the 2 yolks.
Sift in the self-raising flour and mix, then the polenta and the ground almonds. Mix till it just comes together into a smooth batter.
Grease a rectangular loaf tin, sprinkle some plain flour and pour in the batter.
Bake in an oven in static (not ventilated/fan mode) mode at 356F for 40-50 minutes, until a toothpick inserted in the middle comes out clean.
Take it out of the oven and after 10 minutes capsize onto a rack and let it cool completely. Sprinkle with icing sugar and serve with a cuppa or as an afternoon treat for the kids!
