Rice Paper Omelette

This is my new go to breakfast, snack, dinner, you name it. It is one of the easiest 'omelettes' I've ever made and it will be for you too! This is similar to the dish Bánh xèo which translates to Vietnamese Crepes, except it removes the entire step of preparing the batter and cooking it. Instead, we are just using rice paper! You can add fillings of your choice, but for this recipe I kept it super simple with egg, chili oil, scallions, kewpie mayo, and sriracha. That's truly all you need to make a delicious rice paper omelette.

Ingredients

  • 2 sheets of rice paper
  • 2 eggs
  • 2 tsp chili oil
  • 1-2 scallion stalks
  • kewpie mayo to serve
  • sriracha to serve
Instructions

Heat the chili oil in a pan
Add one sheet of rice paper then crack an egg into it
Break the egg gently using a chopstick and cover the entire sheet with egg
Once the egg begins to cook, fold the rice paper in half gently
Flip until crisp on both sides, then repeat with the other sheet of rice paper & egg
Place on a plate the cut in half into triangles
Garnish with scallions, kewpie mayo, and sriracha
