Shrimp Rice Paper Rolls

I love an easy, quick, and healthy snack. I've been having random cravings on rice paper rolls / fresh spring rolls, well, Vietnamese cuisine in general. I've had those rolls a few times at restaurants but I always find pleasure in recreating my favorites at home, using my own creativity and imagination.


Those rice paper rolls filled with vegetables and shrimps are such an enjoyable snack, very nutritious and filling. Another variation would be to add vermicelli rice noodles which would elevate the game, but I didn't have any at the time of making this meal.


The one challenge I have with rice papers is when they tend to get soggy / sticky / about to tear apart if I dip them in water for too long, so I try to soften them in the water just for 10 seconds understanding they will soften up even more as I add the filling ingredients.

Ingredients
For the Rolls
  • 4 spring roll rice wrappers , found in the Asian foods section at the grocery store (or on Amazon)
  • 1 large carrot, peeled and sliced into thin strips (julienned)
  • 1 large cucumber, thinly sliced (julienned)
  • 1 avocado thinly sliced
  • 1 pound small, cooked shrimp , deveined, tails removed, (or chicken or tofu)
  • 1 bunch fresh mint leaves
  • 1 bunch fresh basil leaves
For the Peanut Sauce
  • 1/4 cup rice vinegar
  • 1/4 cup peanut butter , smooth or crunchy
  • 1 tbsp soy sauce
  • 2 tbsp honey or maple syrup
Instructions
For the Rolls
Add about 1 inch of water to a large, deep dish. Place one rice wrapper into the water and let soak for about 10-15 seconds. It should still feel pretty firm as you remove it and lay it on your counter or plate. 
Layer 1-2 slices of each veggie, a few shrimp, a few leaves of each herb on the first ⅓ of the spring roll (side that is closest to you)
Fold the sides of the spring roll in over the ingredients. Then pull the side closest to you up and over the ingredients, sealing everything together tightly, and rolling it up like a tight sandwich / burrito. 
Serve with peanut sauce
For the Peanut Sauce
Add all ingredients into a blender and pulse until smooth
