Ingredients

  • 1 cup shredded purple cabbage
  • 1 cup shredded white cabbage
  • 2 zucchinis shredded
  • 2 carrots shredded
  • 2 tablespoons sesame oil
  • 1 tablespoon garlic paste
  • 1 tablespoon ginger paste
  • 2 tablespoons fish sauce
  • 2 tablespoon teriyaki sauce
  • 1 packet rice paper (you will need around 12 sheets)
Instructions

In a large pan, with a drop of olive oil on medium-high heat, add in all the vegies (purple and white cabbage, zucchinis and carrots).
Stir with a wooden spoon until all the vegies have softened, this should take around 10 mins. remove from heat and set aside.
Follow the instructions on the packaging on the rice paper to soften it. This usually involves placing the sheet in very hot water and flipping it over to soften it on both sides for around 30 seconds.
Once softened, place the sheet on a flat surface like a plate and place around 3 tablespoons of cooked vegetables in the center of the sheet. fold in the 4 sides one at a time, tightly without tearing the paper to form a burrito.
Repeat until all the mixture has been used.
Place the rolls in the air fryer, making sure they don't touch - you may have to do two rounds.
Put the air fryer on 200 degrees Celsius (30 degrees Fahrenheit) for 15 minutes, flipping in the middle.
Remove from the air fryer and let cool slightly before serving.
