One of my favorite things to order out is Sushi. It is something that I could easily enjoy on a weekly basis, however my budget would not.

I love making these sushi bowls at home regularly, as they are so simple to put together and are a very budget friendly meal. These bowls are completely customizable also making them very family friendly. I love to serve everyone a bowl of rice, and have all of of the toppings prepped and available for each person to add their own.

Making the "sushi" into a bowl is also a huge time saver and no special skills are required for assembly.

To make a "California Roll" in a bowl, begin with a bowl of room temperature seasoned sticky rice. You can use regular rice but I highly recommend the sticky "sushi" rice for a truly authentic flavor. Follow the cooking directions for the rice on the package and once cooled season with a few dashes of rice wine vinegar.

To the bowl add in your favorite sushi toppings. Since I am making a "California Roll" I will be adding in the components for that. I began with some small diced cucumber.

To that I added some chopped imitation crab.

Next you want to thinly slice an avocado and add half to each bowl.

Garnish the bowls with some finely cut up seaweed. Cutting it in small pieces will help the seaweed to incorporate evenly and make these bowls easier to eat.

I had leftover sweet potatoes on this day, and since I love sweet potato sushi also I decided to add them to the bowl along with a drizzle of sriracha mayo and it was absolutely delicious.

The sweetness of the sweet potatoes worked very well with the salty soy sauce and spicy sriracha mayo.

I like to gently mix the bowl together right before eating until all of the ingredients are evenly incorporated. Top with some panko breadcrumbs for added crunch, season with a little bit of soy sauce and enjoy!

Ingredients

  • 2 cups cooked and seasoned sushi "sticky" rice (season with 1 tbsp rice wine vinegar)
  • 1/2 english cucumber
  • 4 sticks imitation crab
  • 1 avocado
  • 1 sheet of seaweed cut into small pieces
  • 1 tbsp panko breadcrumbs
  • Prepared Sriracha mayo to taste
  • Soy Sauce to taste
Instructions

Cook and season the sushi "sticky" rice according to package directions and let cool.
Place about one cup of cooked rice to the bottom of each bowl.
Top the rice with chopped cucumber, imitation crab, avocado and seaweed.
Garnish with Panko breadcrumbs, Sriracha mayo to taste, and season with soy sauce.
