Truffle Gnocchi

Combining my favorite things to make this rich and delicious gnocchi. Using truffle, parmesan cheese, light cream, and gnocchi, this dish is sure to please. For this dish I had a truffled parmesan from Costco that I used, but if you are unable to find a truffled cheese you can use regular parmesan and a truffle oil to finish instead. You can also add sausage, spinach, mushrooms, or whatever you'd like to this!


I also opted for the gluten-free frozen cauliflower gnocchi from Trader Joes, but regular gnocchi or other pasta choice works as well.

Ingredients

  • 340g gnocchi - cooked per labelled instructions
  • 1/2 brown onion, finely diced
  • 2 cloves garlic, minced
  • 1 cup light cream
  • 1/4 cup chicken broth
  • 4 tbsp truffled parmesan
  • butter & olive oil to cook with
  • salt & pepper to taste
Instructions

Heat a knob of butter in a pan then add a drizzle of olive oil
Cook the chopped onions on low, stirring them until caramelized and golden brown
Add the minced garlic then continue mixing until aromatic
Add the chicken stock, cream, and truffled cheese
Continue heating on low until the sauce thickens
Add the cooked gnocchi to the sauce
Serve with more cheese & enjoy!
