4-ingredients gnocchi that is ready in under 10 minutes!!!

Gnocchi are one of the quickest things you can cook, you can buy them ready-made and they only take 2-3 minutes in boiling water, and this recipe ensures you have them on the table in no time tasting delicious.

If you buy ready-made gnocchi, go for the fresh ones in the fridge aisle! They taste 100 times better and they are way softer, making them perfect also for young children. My son got one of the non-fresh ones stuck at the top of his mouth when he was a baby. You can also easily make your own if you have a little bit more time!

  • 3 tbsp olive oil
  • 13-15 cherry tomatoes, quartered
  • 2 tbsp chopped fresh chives
  • 1 lb 1.64 oz (500g) gnocchi

Heat up some olive oil in a small pan and add the tomatoes. Let them cook on a low heat until softened (about 5 minutes). Season to taste.
In the meantime, boil the gnocchi in salted water according to the packet instructions or until they start floating in the water. It won’t take more than 2 minutes.
Once they are cooked, drain them and coat them with the cherry tomatoes and all the olive oil and juices from the pan.
Add the chopped chives on top and serve! It doesn’t get any easier or quicker than that really!
