Spinach & Tomato Gnocchi Recipe

This was an experiment which turned out amazing and that’s why I’m sharing it here with you.

What is so special about this dish is that everything is cooked in one pot! One of those successful cooking experiments which are great for saving time and get a meal ready in a very short time.

This was the first time for me cooking the gnocchi directly in the sauce and the result was so delicious that I had to share!

These gluten-free & egg-free gnocchi tuned out super creamy and it was such a quick meal too. A great easy dish ready in 25 minutes!

Ingredients

  • 250gr gnocchi
  • handful of spinach
  • handful of tomatoes
  • 1 leek
  • extra virgin olive oil
  • salt
  • paprika
Instructions
Method
Start by chopping the tomatoes & leek and pan fry them with extra virgin olive oil for about 5 minutes.
Then add spinach, salt, paprika, add the gnocchi & some water.
Cover with a lid for 5 minutes and simmer occasionally. Add more water If necessary.
The gnocchi will turn out super creamy without any cream & full of flavour as they were cooked in the sauce itself.
Hubby and I absolutely loved the result!
