Most people I know love pasta and while I could eat it every single day of the week, sometimes an alternative would be nice.

If you are searching for a food as delicious as pasta but somehow different you will love Gnocchi! Gnocchi are little Italian dumplings made out of potatoes! You can buy them in the grocery shop, however, I prefer to make them from scratch. This takes some more time but it is totally worth it. They taste the best served in a light tomato sauce with some sautéed tomatoes on top and sprinkled with parmigiano!

Depending on whether you use a homemade sauce because you have an amazing recipe or you just go with a store-bought one this recipe is easy to prepare but so delicious!

Ingredients
For the Gnocchi
  • 1kg potatoes
  • 300g flour
  • 1 medium egg
  • Salt
For the Gnocchi Bake
  • The cooked gnocchi (see above)
  • 600ml of your favorite tomato sauce
  • Fresh tomatoes
  • Parmesan cheese
  • Oil, salt and pepper
Instructions
For the gnocchi
Put the potatoes into a pot filled with cold water. Turn on the heat and once the water starts boiling let the potatoes boil for 30-40 minutes until they are cooked.
While the potatoes are still hot start to peel them and squeeze them through a potato ricer on the flour.
Lightly beat the egg and put it with some salt on the dough. Knead the dough with your hands until it is a soft and firm dough. Do not overknead.
Take a small piece from the dough and roll it out into a 2cm thick roll. If the dough is too sticky do not hesitate to use more flour. Cut the roll into smaller gnocchi-sized pieces. Shape them into their typical form by using a fork or a gnocchi-shaper (if you own one). Put the finished gnocchi on a tray with a dishcloth so they do not stick.
Bring salted water to boil and put in the gnocchi in several sessions. When they come to the surface they are done.
For the gnocchi bake
Put the cooked gnocchi into a casserole dish. Combine with your favorite tomato sauce and set aside.
Preheat the oven to 180 degrees Celsius
Wash the tomatoes and cut them up. Put them in the pan with some oil and sauté for 10 minutes. Season with salt and pepper. Garnish the tomatoes on the gnocchi.
Sprinkle with Parmesan cheese and put the casserole dish into the oven.
Bake for 15-20 minutes. Enjoy!
Tips
  • If you don’t have a lot of time on hand I recommend using store-bought gnocchi instead of homemade ones. Then this dish can be prepared very fast and it it still delicious
