Creamy Bacon Mushroom Penne

As a child, my only encounter with pasta was the Chinese macaroni soup that my mom made. I didn’t even know that other forms of pasta existed until I started watching cooking shows in my teens. I would follow my mom to the grocery store and could not believe the assortment of pasta shapes available. I was truly amazed. Naturally, the first kind of pasta dish I cooked was spaghetti with ground beef and jarred pasta sauce. I think I’ve come a long way now.


Whenever I’m in need of an easy meal, I turn to pasta. This creamy bacon and mushroom penne is super easy to make and will have everyone just licking their plates! It is very flavorful and so indulgent. The only tedious part is slicing the mushrooms but you can also buy pre sliced mushrooms and cut down your prep time.

Ingredients

  • 1lb box penne
  • 2 slices of thick bacon, diced
  • 2lbs cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tsp mushroom seasoning
  • 2 cups heavy cream
  • 1/2 cup grated parmesan
  • salt and pepper to taste
Instructions

In a large deep skillet, add in the bacon and turn heat to medium high. Cook until the bacon is crispy and has rendered fat. Remove the bacon from the pan, leaving the fat behind.
In the same skillet, add in all of the mushrooms and sauté until browned. It will be very watery to start and slowly the water will evaporate and the mushrooms will brown.
In a large pot, bring water to boil and cook the penne until al dente following the instructions on the box.
Once the mushrooms are browned, add in the cream and the mushroom seasoning. Turn the heat down to low allowing it to simmer for a few minutes.
When penne is done, reserve 2 cups of pasta water. Add the penne to the cream mixture along with a cup of pasta water. Add in the cooked bacon. Mix and allow pasta to finish cooking through in the cream sauce for a few minutes. If needed, add in the reserved pasta water to thin the sauce. Once the sauce has thickened up, and the pasta is finished cooking, add in the parmesan and mix. Taste and season with salt and pepper. Serve and enjoy!
