Crunchy Walnut Granola is a perfect snack served with Greek yogurt or a delicious breakfast paired with your favorite variety of milk. It’s packed with good for you ingredients and warm spices.

Since so many of us love to snack, it makes sense to me to keep some healthy ones on hand. When you make your own granola, you have full control of the ingredients being used. Plus, it saves you a ton of money. Those small bags of the healthier choices at the grocery store get pretty darn expensive.


Homemade granola is also super simple to make. It only takes about 10 minutes to measure and mix all the ingredients. Then, just bake it at a low temperature for about 20-25 minutes, stirring at least once.


Don’t be tempted to turn that oven up, and cook it faster. The granola needs time to dry out, and get crunchy. Besides, a higher heat runs the risk of burning the nuts rather than toasting them.

How do I store homemade granola? Store granola in an airtight container in the pantry for up to several weeks. If you live in an area with higher humidity, it may not last as long.

Can I use quick oats for making granola?I wouldn’t recommend using quick oats in place of old fashioned rolled oats for making granola. The quick oats won’t retain their texture as they cook.


INGREDIENTS FOR RECIPE:

  • Rolled oats: a good source of fiber and protein.
  • Walnuts: good source of healthy fats.
  • Pepitas (pumpkin seeds): healthy fats and antioxidants.
  • Chia seeds: add fiber, protein, and omega-3s.
  • Date syrup: lower glycemic index than honey or maple syrup.

HOW TO PREPARE CRUNCHY WALNUT GRANOLA:

  • Preheat oven to 300ºF, and line a rimmed baking sheet with parchment paper.
  • Measure all the dry ingredients (except the dried apples) into a large bowl. Add the date syrup, coconut oil, and vanilla. Stir to completely coat the dry ingredients with the wet ingredients, and ensure that everything is well blended.
  • Spread the granola mixture evenly into a single layer in the sheet pan with a spatula.
  • Bake for 10-11 minutes, then remove the pan and stir the granola. Spread back into a thin layer with the spatula, and bake for about 10 more minutes. Granola will be golden brown on top when ready. It it’s not golden brown and fragrant yet, stir again, then continue cooking for a few more minutes. Just make sure to keep a close eye on it to ensure it doesn’t burn.
  • Remove from the oven, and stir in the chopped apples. Spread back evenly on baking sheet, and press down lightly with the spatula if you’d like granola with larger clumps. Place the sheet tray on a baking rack to completely cool before storing the granola in an airtight container.
Measure dry ingredients into bowl.
Stir in wet ingredients.
Spread in single layer on baking sheet.
After baking, stir in dried apples.
Spread back into layer, and cool until dry.
