This may sound like an odd combination of flavours, but trust me when I say it is worth trying before you make a decision on that! I came across this flavour combination while trying to wean my baby. The recipe below is.perfecr for babies over the age of 6 months, hence why the blueberries are squashed with a fork to avoid any choking risk.


It's my opinion, however, that this is actually a fantastic breakfast option for us adults too! Particularly those of us who struggle to find time to fit a good, nutritious breakfast into our busy schedules.


The ingredients are blended together in a matter of minutes before being placed in the fridge. Then that's when the magic happens overnights, as the oats soak up the delicious sweet yet savoury flavours of the pear, beetroot and blueberries!

Ingredients

  • 1 pear, cored and roughly chopped
  • 1 medium cooked beetroot, roughly chopped
  • 60g blueberries
  • 6 tbsps water
  • 3 tbsps natural greek yoghurt
  • 80g oats
Instructions

Place the pear, beetroot, water and yoghurt into a blender and blend until smooth.
Tip the mixture into a bowl and add the oats.
Squash the blueberries thoroughly with a fork to a pulp, then add to the bowl with the oats.
Stir everything to combine well, then tip the mixture into a jar.
Place the jar in the fridge the night before you want to serve for a quick and easy breakfast!
