Blueberry Lemon Overnight Oats

These Blueberry Lemon Overnight Oats are deliciously refreshing! The lemon zest and juice adds a bright note to compliment the sweet, juicy blueberries. Everything is mixed together in a bowl or jar and placed in the fridge overnight to enjoy in the morning for a tasty and convenient breakfast.

Ingredients:


  • 1/2 cup old fashioned oats
  • 1/2 cup almond milk
  • 1/4 cup vanilla yogurt
  • 1 tbsp fresh lemon juice
  • zest of 1/2 a large lemon
  • 1/3 cup blueberries, fresh or frozen
  • 1 individual vanilla coffee creamer (approximately 1 ½ tsp) I use International Delight French Vanilla individual size. (You could also use 1 tsp vanilla extract in place of creamer.)

Instructions:


Mix together all ingredients in a bowl or jar, then cover and place in refrigerator overnight, or for at least 2 hours.

Open, stir and enjoy as is or garnish with extra zest or honey drizzled on top.

    Eat the oatmeal cold?

  • Hi Darlene, thanks for asking! I like to enjoy cold during the summer, but you can absolutely warm it up in the microwave. Here’s my instructions for heating: For a warm treat, heat on high in microwave for 1 minute, stir, then heat for another 30-45 seconds. Stir and enjoy.
